This is a whole Serrano ham off the bone, called 'Gran Reserva' as it has been cured for a minimum of 18 months. Torre de Nunez use pure-bred Duroc breed pigs; higher in fat marbling than other breeds, which means less salt is required for the initial curing. After a few weeks, the salt is washed off and the hams are hung to cure naturally over at least 18 months. As a result of using less salt, the flavour is sweet and mellow, and less salty than most Serrano ham on the market. Apart from the superior flavour, it is obviously a more healthy option! The ham comes vacuum-packed for freshness.
