This is a lovely flavoured 18 month-cured Serrano ham on the bone from Torre de Nunez in Galicia. Pure-bred Duroc pigs have superior fat marbling, which means that 25% less salt is needed in the curing process. As a result, the flavour is sweet and mellow. It is also more healthy!
