Tiny Calico scallops (Zamburinas) from the Rias Gallegas in northern Spain are gently sauteed in a light sauce of tomatoes, onion and peppers, olive oil and spices.
These scallops can be eaten cold, or served warm with a squeeze of lemon, and some fresh parsley on crusty bread.
