This is an artisan-made unpasteurised semicured large Manchego round, weighing 3kg.
It is made using the milk of the Manchega sheep, and cured for a minimum of 2 months. They are cured in basket shaped moulds which give the cheeses a characteristic basket-weave pattern. The unpasteurised milk and the curing time give the cheese its full rounded flavour.
This cheese is from the same supplier as our D.O.P. Manchego, Finca la Prudenciana. It's cheaper than those primarily because it doesn't have a D.O.P. from La Mancha, but it is made by the same artisan cheese maker, with unpasteurised Manchega sheep's milk.
