These Piquillo peppers are delicious! Grown on the banks of the Ribera del Ebro in Cataluña, they are first roasted over wood fires. This enables the skins, which are a bit bitter, to be removed by hand. The roasting also deepens the flavour of the peppers and peeling by hand preserves their delicious juices.
