This Gazpacho is made in traditional fashion using Spanish grown tomatoes, bell peppers and cucumber. These are given a bit of zing with fresh garlic, sherry vinegar and extra virgin olive oil. This simple, light no-cook soup is perfect served chilled on a hot summer's day. It contains all the intense flavours, aromas and colours of a Spanish summer!
It contains all the main ingredients of a Mediterranean diet; healthy and delicious. it is perfect as a light lunch, tapa or as a starter at dinner. Suitable for vegans and is also gluten-free.
The soup is traditionally served sprinkled with small cubes of serrano ham or chopped hard boiled egg. Or finely chopped cubes of cucumber and tomato work very well instead. And for a gourmet treat, add a few chilli olive oil pearls from our Caviaroli range!
