This is an aged sherry vinegar from Bodegas Dios Baco in Jerez, Andalucia. It has been matured in oak barrels using the traditional 'criadera y solera' system. The natural sharpness of sherry vinegar has been tempered by the addition of sweet raisiny Pedro Ximenez sherry.

This makes the vinegar rich and raisiny with toasted notes from the oak barrels. But it also has the sharpness and floral perfume of sherry vinegar. Spain's answer to Italy's balsamic vinegar!
