Our Serrano Hams are from pure-bred Duroc pigs produced by an artisan company in Galicia. The pure-bred Duroc breed has superior marbling in the meat from the usual mixed breed of Serrano ham, and it is this marbling which enables our supplier to use less salt in the curing process. This off the bone ham has been cured for more than 18 months, cleaned of skin and vacuum-packed. Read about the producer here
