New from our supplier of Serrano hams, Torre De Nunez, are these Paleta hams on the bone. Paleta is the front leg of the pig rather than the Jamon, the hind leg. It is smaller than the Jamon, with darker meat - but still delicious and at a better price point!
These paletas are from Duroc breed pigs, and have been cured for a minimum of 12 months. which means they are 'Gran Reserva'. The Durco breed has more fat marbling in the meat, which allows curing with 25% less salt than usual. The meat is sweeter and more mellow as a result.
