This is a quarter piece of cured Serrano ham from our supplier of Serrano products, Torre de Nunez, in Galicia. They use Duroc breed pigs for their hams, renowned for their flavour and fat marbling in the meat. This allows the hams to be cured using 25% less salt, making the flavour sweet and mellow.
These hams have been cured for a minimum of 15 months. They are taken from a whole off the bone ham, cut into four pieces and vacuum-packed. For best results, slice this mellow, richly flavoured ham very thinly with our flexible knife.
