This delicious smoked cheese is made from pasteurised cows milk and shaped in a distinctive cone. The shape of the cheese is said to resemble a jester's cap (bufon in Spanish - we would say Buffoon!).
The cheese is lightly smoked over birch wood to give a delicate smoky flavour with a nutty aftertaste. The smking process also forms the distinctive orange rind. It is excellent as a breakfast cheese, in cooking, as a melting cheese or part of a cheeseboard. To drink: a young, fresh white or light red Rioja.
