Nutty, melt-in-the-mouth vacuum-packed Paleta slices made from the front leg meat of Iberico Pata Negra pigs. These are the pigs descended from wild boar, fed on mixed grains including acorns. Instead of using the back leg of the pig (the Jamon), the meat comes from the front leg, the Paleta. As a result, the meat is a darker colour with less fat. Bringing the pack up to room temperature before opening makes preparation easier and improves the flavour. But if you can't wait that long, you can hold the unopened pack under hot water for 10 seconds instead!
