One of Spain's most famous delicacies is Pata Negra ham. Descended from Iberian wild boar, these pure-bred, black-footed Iberico pigs feed on acorns and mixed grains, allowing the rich oleic acid from the acorns to infiltrate the meat, giving it its distinct rich, melt in the mouth quality and even certain health benefits when eaten in moderation!
The pigs spend their later months grazing free range on Dehesas of Extremadura. Ours are supplied by Bernardo Hernandez, an award-winning family company in Guijuelo in Salamanca and holder of multiple Great Taste Awards. Read more about the producer here
