Flor de Sal is the natural salt 'blossom'; the surface crystals created when sea salt is dried naturally in the sun. These delicate salt crystals are harvested carefully by hand to separate them from the rest of the sea salt. Salt blossom contains as many as 80 trace mineral elements. The amount of sodium chloride (the main component of common salt) is lower than in most salt. Magnesium, naturally present in sea water, is one of the first elements brought to the surface by the sunlight and wind – giving this a high magnesium concentration up to 20 times higher than that of ordinary sea salt. It also contains double the amount of potassium and calcium, and numerous other trace elements compared to standard sea-salts. Flor de sal also tastes much nicer, having a less harsh salt flavour, more rounded on the palate.
The salt fields of Es Trenc are located on the largest unspoilt beach in the southern part of Mallorca. It is home to a dune system and ecologically important wetland. The salt fields are home to flourishing colonies of bird species such as the avocet, black-winged stilt, common shelduck, snowy plover and flamingo.
