Three of our favourite Diso Baco sherries: Pedro Ximenez, Amontillado and Fino, in a delightful gift box. Pedro Ximenez is made from naturally sweet Pedro Ximenez grapes, aged in American oak casks using the traditional Criadera y Solera system. It is dark mahogany in colour and viscous in texture with the highly aromatic aroma of raisins characteristic of Pedro Ximenez. Amontillado develops from an aging Fino after the 'flor' has died, allowing oxygen into the wine to continue the maturation process. So it is made with Palomino fino grapes, as is the Fino and Manzanilla, using the traditional Criadera y Solera system of ageing in American oak barrels. Light amber in colour, it is a classic Amontillado, full-bodied but still dry with an aroma of butterscotch and hazelnuts and soft nutty flavours. Fino sherry is made from Palomino Fino grapes, which develop a layer of white yeast, the 'flor', in the cool damp air of the Bodegas - only those with a particularly good flor are made into Finos, as this keeps the wine from oxidising; those with less 'flor' become Olorosos. It is aged in American oak barrels using the traditional Criadera y Solera system. It is a pale straw colour, fresh and aromatic, dry and crisp on the palate with notes of olive and apple, yet rich and with a full soft finish. These sherries are from the prestigious bodegas of Dios Baco and carry a Denomination of Origin of Jerez as a sign of their quality.
