Manzanillas are made in the same way as a Fino, using Palomino Fino grapes. The sherry is aged in American oak casks using the traditional Solera system in the cool, humid, salty air of Sanlucar de Barameda by the Atlantic sea. It is pale yellow in colour and is said to have the sea breeze in its aroma!
It is bone dry, light and fresh, clean and crisp. It has a delicate and refreshing acidity with notes of apple and straw and a nutty finish. Drink well-chilled as an aperitif with salted almonds or with tapas dishes such as prawns and seafood or Serrano ham. Keep in the refrigerator and drink within a few days for optimal freshness.
