Description
Amontillado develops from an aging Fino after the 'flor' has died, allowing oxygen into the wine to continue the maturation process. So it is made with Palomino fino grapes, as is the Fino and Manzanilla, using the traditional Criadera y Solera system of ageing in American oak barrels. Light amber in colour, it is a classic Amontillado, full-bodied but still dry with an aroma of butterscotch and hazelnuts and soft nutty flavours. Very attractive fresh fruit and clean acidity on the palate. Serve cool rather than chilled, as an aperitif with olives, nuts or cheese (Manchego, Mahon or Cabra al Romero work especially well) or with soups, cold and smoked meats, pates, mushrooms, chicken and many spicy Asian dishes.
