Description
Amontillado is made with Palomino Fino grapes, the same grapes used in making Fino and Manzanilla. It develops from an ageing Fino after the 'flor' has died, allowing oxygen into the wine to continue the maturation process. It is then aged using the traditional Criadera y Solera system, in American oak barrels.
Light amber in colour, it is a classic Amontillado, full-bodied but still dry with an aroma of butterscotch and hazelnuts and soft nutty flavours. Very attractive fresh fruit and clean acidity on the palate.
Serve cool rather than chilled. It is perfect as an aperitif with olives, nuts or cheeses, such as Manchego. It can also be served with soups, cold and smoked meats, pates, mushrooms, chicken and many spicy Asian dishes.
