When dried, Choricero peppers are ground for their spicy flavour and deep earthy red colour and used to give chorizo sausages their flavour and colour. The pepper pulp is used  as an ingredient in many Spanish sauces and dressings including the famous "Bacalao con pimiento choricero", salt cod with a spicy pepper sauce.
