Choricero pepper paste is a really useful ingredient for adding warmth and rich umami flavour to sauces and casseroles. These peppers are grown at an altitude of over 700m in the mountains of La Rioja in northern Spain. Choricero peppers are valued for their flavour and deep earthy red colour.They can be ground, or, as in this product, the flesh is made into a pulp.
Most commonly they are used to give chorizo sausages their flavour and colour. In addition, they are a valuable presevative, avoiding the need for artificial additives. This is a great ingredient in many Spanish dishes. One of the most famous is 'Bacalao con pimiento choricero', salt cod with a spicy pepper sauce.
