These are an amazing new product, created by the famous Catalan chef, Albert Adria, brother of Ferran Adria from the world-famous restaurant El Bulli. In conjuction with our supplier of olive oil pearls, Caviaroli.
They are olive juice spheres, made with crushed olives and a touch of piparra. Piparras are bittersweet green chillies from Navarra. There is an intense olive flavour with a mild kick from the Piparra. The drops are of approximately 20mm in diameter with a liquid interior. So when you bite into them they burst in the mouth, releasing the juice inside.
These are a classic appetizer from molecular or avant-garde cuisine ready to eat. The spherical olive drops are contained in a mixture of brine and extra virgin olive oil to improve their conservation. So that when they are removed from the jar they have a thin layer of high quality oil that gives them shine and a great aroma.
It can be served neat on a catering spoon, a Japanese soup spoon, or a normal dessert spoon resting on the edge of the plate or tray where it is presented.
