This savoury marmalade from Can Bech in Girona, northern Catalunya, is absolutely delicious. It is made using the finest Piquillo peppers, caramelised with a little sugar and lemon juice to bring out the sweet flavour of the peppers. Piquillo peppers are sweet and rounded in flavour, with very little heat. This makes a bright, flavourful and lightly acidic savoury marmalade.
It is a perfect complement to cold meats, such as lamb or beef. And great with hard cheeses such as Manchego and Mahon; or, nearer to home, Cheddar and Gouda.
