The finest flavoured anchovies (Engraulus encrasicolus) are from Cantabria. These fresh fish are preserved by marinating them in vinegar which keeps their white colour and delicate flavour. After marinating they are packed in sunflower oil in a sleeved tray. We tasted a lot of anchovies to find ones as good as these, so we are not surprised that they won a coveted 2 star Gold medal in the Great Taste Awards for their quality! The judges said they were 'lovely plump fish with a good texture...a real delight to eat...really beautiful anchovies'.
