The finest Boquerones, white anchovies (Engraulus encrasicolus) are from the Cantabrian sea. These fresh fish are preserved by marinating them in vinegar. This keeps their white colour and delicate flavour. After marinating they are packed in sunflower oil in a round tray.
We tasted a lot of anchovies to find ones as good as these, so we are not surprised that they won a Gold medal in the Great Taste Awards! The judges said: "a pleasing balance of salinity, tender texture and lingering flavour. A fine example".
