The finest flavoured anchovies, Engraulus encrasicolus, are from Cantabria. They are preserved by marinating in vinegar, which keeps their white colour, then packed in sunflower oil before being packed in a sleeved tray. We tasted a lot of anchovies to find ones as good as these, so we are not surprised that they have won this coveted 2 star Gold medal for their quality!
