A fabulous gift set containing two gourmet wine vinegars from Castell de Gardeny in Catalunya. The gift pack contains 250ml Balsamic Chardonnay white wine vinegar and 250ml Balsamic Cabernet Sauvignon red wine vinegar. Both are made using the Schützenbach method, which dates to 1823. Unlike most industrially produced vinegars this is a fermentation process ten times slower than mass-produced vinegars. The process allows the alcohol content to aerate by circulating it through sections of the French oak barrels, ensuring that the aromatic qualities of the original wine are preserved. This creates a vinegar with a rich and full flavour. The vinegar is then combined with a little grape must and aged for 12 months in French oak; which refines and matures the vinegar to give an elegant and complex flavour with fruity and toasted notes from the oak, a delicate acidity and a silky body. Both these vinegars are packed in a card tray with red paper shred, sealed with a lid and hand-tied with red and yellow raffia.
