Bahia is a type of paella rice, short-grain and quick-cooking, carrying a Denomination of Origin from Valencia; similar to Calasparra rice from Murcia. It comes in an attractive cotton sack which helps to keep the rice protected, dry and not humid. Bahia rice is used widely throughout Spain for paellas. It is a good alternative to Bomba, and is especially well suited to making larger paellas as it requires less tending to when being cooked than bomba rice and has a shorter cooking time. Bahia rice doubles in size when cooked, absorbing a lot of flavour.
