This is an artisan-made unpasteurised semicured large Manchego round, weighing 3kg. It has a Denomination of Origin from La Mancha as proof of its quality and provenance.
It is made using the milk of the Manchega sheep, grazing the open grasslands of La Mancha. The semicured cheeses are cured for a minimum of 3-4 months. They are cured in basket shaped moulds which give the cheeses a characteristic basket-weave pattern. The unpasteurised milk and the long curing time give the cheese its full rounded flavour.
