This is an artisan-made unpasteurised semicured Manchego wedge, weighing 250g. It is made using solely the milk of Manchega sheep, grazing the open grasslands of La Mancha. It has a Denomination of Origin from La Mancha as proof of its quality and provenance. The Manchego rounds, with their characteristic basket-weave pattern, are cured for a minimum of 4-5 months, giving the cheese its full rounded flavour. We have 1kg and 3kg semicured cheeses as well as these wedges. And if you are looking for more cured Manchego, we have this as well: curado (8-9 months) and anejo (12 months) in 3kg large rounds.
