This is a small, artisan-made semicured Manchego round, weighing 1kg. It is made using solely the unpasteurised milk of Manchega sheep, grazing the open grasslands of La Mancha. It has a Denomination of Origin from La Mancha as proof of its quality and provenance. The Manchego rounds, with their characteristic basket-weave pattern, are cured for a minimum of 4-5 months, giving the cheese its full rounded flavour. We have 250g wedges and 3kg large rounds of this semicured cheese as well as these 1kg rounds.
