This is an artisan-made unpasteurised aged large Manchego round, weighing 3kg. It has a Denomination of Origin from La Mancha as proof of its quality and provenance.
It is made using the milk of the Manchega sheep, grazing the open grasslands of La Mancha. These cheeses are cured for a minimum of 9 months. They are cured in basket shaped moulds which give the cheeses a characteristic basket-weave pattern.
The unpasteurised milk and the long curing time give the cheese its full rounded flavour. It has a crumbly texture and superb, rich, tangy flavour. Great eaten with membrillo, quince paste. Drink with a full-bodied red Rioja, or a glass of Amontillado or Oloroso sherry.
