This new range of honey is from a young team in Cordoba, Andalucia. Their beehives are in an area of biodiversity called the Parque Natural de Cardena, famous for its wild rosemary and lavender. All processes are done manually, and they give the bees a three week holidays from honey collection every six weeks. The resulting flavours are gentle and natural. Their honey is made by removing the comb from the hive, extracting the honey by centrifugal force, without heat treatment or mixing with other honeys, and maintaining careful manipulation throughout the process while maintaining a natural, artisanal honey.
