Shiitake mushrooms are originally from Asia and are known to have many nutritional and culinary properties. The texture is meaty and it holds its shape well during cooking. Very tasty with an intense woody aroma, it can be used raw in salads, sauteed as a tapa, used as an ingredient in soups, risottos and lasagne, or with meats and fish. If using in cooking you can add the fried mushrooms as they are, but to eat raw, soak for up to 5 hours so they regain their shape - you can use the soaking water to add flavour to stocks and soups.
