This is a whole boned Serrano ham with the bone, skin and excess fat removed to aid carving. It comes from pure-bred 'Duroc' white-foot pigs in Galicia, and the marbling in the meat means our supplier uses less salt in the curing process, making it not only healthier, but giving the meat a sweeter more mellow flavour. It has been cured for a minimum of 14 months to give a firm texture and a great intensity of flavour. Best used sliced paper-thin with a meat slicer.
