This is a top of the range 100% Iberico Pata Negra ham from Jabugo, the most famous ham producing town in Andalucia, southern Spain. They have been fully acorn-fed, running in the oak forests of the dehesas in Extremadura to fatten up during the autumn period. The legs are them salted and cured for 30-36 months to produce a marbled, melt-in-the-mouth texture and full, rich nutty flavour. These hams bear the SUMMUM label that the Huelva-Jabugo D.O. grants only to the best bellota grade hams each year.
