Tiny 'Calico' scallops (Zamburinas) from the Rias Gallegas (the Galician estuary) in northern Spain, gently sauteed in a light sauce of tomatoes, onion and peppers, olive oil and spices. Can be eaten cold as it is, or serve warmed with a squeeze of lemon, some fresh parsley and some crusty bread.

 

Ingredients: Small scallops, sunflower oil, onion, tomato, wine, spices and salt.
